How to make Beef and Potato Stir Fry

This is a healthy and delicious beef and potato dish you should totally try. It would make a perfect family dinner, especially when you are trying to get the kids to eat more. What child doesn’t like some sweet potatoes and lots of beef?!

Serves 2

Prep time: 15 minutes

Cook time: 15 minutes

Ingredients:

225g lean rump steak or sirloin steak

450g potatoes, peeled and cut into bite size chunks

15ml sunflower oil

onion, peeled and sliced

garlic clove, peeled and finely chopped

red pepper, cored, deseeded and sliced

50g mushrooms, sliced

75ml beef stock

45ml hoisin sauce

15ml sweet sherry          

15ml freshly chopped parsley

Preparation:

  1. Boil the potatoes for 6-8 minutes, or until just cooked, drain and set aside.
  2. Heat the oil in a large non-stick frying pan or wok until really hot and cook the beef strips for 1 minute. Add the vegetables and cook for 4-5 minutes, stirring frequently.
  3. Mix together the stock, hoisin sauce and sherry, add to the pan, season and heat through for 1 minute.
  4. Garnish with the parsley and serve with green vegetables

Tip: If for family dinner, let the kids have some milk or soy drink, and the parents some juice! Yummy!!
