A Fast Dish after A Fast – Potato Salad

Happy Ramadan to our Muslim brothers and sisters! Keep us in your prayers, even as we have you in our thoughts…and here’s what we think would make a good meal after the fast. Potato Salad! Oh, and did we mention that it was a fast dish!

Cook time: 1omins

Ingredients:

500g Potatoes (preferably, Irish)

Spring Onions

Chopped Parsley

Grated Cheese (optional)

(Thick) Mayonnaise dressing

Preparation:

1)      Wash, peel and cook potatoes until they are done. You might not want them too soft

2)      Drain potatoes, allow to cool and then cut into slices or cubes as you like

3)      Mix potatoes with chopped Spring onions

4)      Sprinkle your chopped Parsley on the mixture

5)      And if you like, add grated cheese to vary the flavor of your salad

6)      Dress with Mayonnaise

7)      Serve!
