How to make Beef and Potato Stir Fry
This is a healthy and delicious beef and potato dish you should totally try. It would make a perfect family dinner, especially when you are trying to get the kids to eat more. What child doesn’t like some sweet potatoes and lots of beef?!

Cook time: 15 minutes
Ingredients:
225g lean rump steak or sirloin steak
450g potatoes, peeled and cut into bite size chunks
15ml sunflower oil
1 onion, peeled and sliced
1 garlic clove, peeled and finely chopped
1 red pepper, cored, deseeded and sliced
50g mushrooms, sliced
75ml beef stock
45ml hoisin sauce
15ml sweet sherry
15ml freshly chopped parsley
Preparation:
- Boil the potatoes for 6-8 minutes, or until just cooked, drain and set aside.
- Heat the oil in a large non-stick frying pan or wok until really hot and cook the beef strips for 1 minute. Add the vegetables and cook for 4-5 minutes, stirring frequently.
- Mix together the stock, hoisin sauce and sherry, add to the pan, season and heat through for 1 minute.
- Garnish with the parsley and serve with green vegetables
Tip: If for family dinner, let the kids have some milk or soy drink, and the parents some juice! Yummy!!
