How to make Coconut Candy
If you did not have some of these growing up, your childhood must have been so boring! Say what?! I could go late to school while waiting for Iya Bili (short for Bilikisu) to open her shop and sell me some cone-shaped coconut candy! It was that bad. What was worse is that the coconut candy that was meant for break time finished even before I got to school.
Serves: 7 candies (moderately)
Prep time: 10 minutes
Ingredients
250 gram, Coconut flesh (or 1 medium coconut)
300 gram white granulated sugar / castor sugar
Preparation
1) Grate the coconut and set aside.
2) Pour the sugar into a dry pot, spread it out and heat up on medium heat. Watch closely.
3) As the sugar starts to caramelize (i.e. change to golden brown like honey), turn down the heat to low and pour in the grated coconut. Mix thoroughly until well incorporated.
4) Put off the heat and transfer into a bowl; leave to cool a bit and mold into your shape of choice.
Enjoy!
Tip: try not to add so much sugar, as coconuts are usually naturally sweet. And coconut candy could be addictive! Be warned!!
