How to cook Nigerian Jollof Rice
If not for anything else, the fact that Jollof rice has been bringing people together either to celebrate or to mourn through parties is enough to celebrate this extremely delicious meal. Ingredients:
2 cups rice (parboiled)
3 seeds Tomatoes (blended)
5 Pepper (blended)
1 Tatase (blended)
1 medium size Onion (chopped)
1 bulb garlic
1 cup Vegetable oil
Knorr cubes
Curry powder
1 teaspoon Salt
1 kg Beef
1 medium size Onion (blended)
1 cup of green peas
4 pieces Carrot (chopped)
Directions:
Wash the beef and cook with onions, curry, knorr cubes and salt. Allow to cook for about 15 minutes or until soft. Set aside.
In a clean pot, pour the vegetable oil in the pot and allow to heat up. Add the onions and garlic and cook for one minute.
Pour in the ground pepper mix and allow to cook for 5 minutes. Pour in the meat stock and then some more seasoning (knorr, salt, curry etc)
Allow to cook for 5 minutes
Add the parboiled rice, cover with foil and place the cover of the pot over the foil. Allow to cook for 20 minutes
Add the bay leaves and green peas. Taste to see if more spices are needed. If yes, add more and allow to simmer.
Garnish with onion slices and tomatoes
