How to cook Ogbono Soup
Ogbono is a popular Nigeran soup recipe made with Ogbono seeds (wild African bush Mango seeds). Just like Okra, Ogbono is a draw soup; it has a mucilaginous (slimy) texture. It is widely accepted by different ethnic groups in Nigeria.
Ingredients:
3 cups of Stock
1kg Meat (washed)
Pumpkin leaves or any local green leaf of your choice (washed and nicely chopped)
1 cup Ogbono (ground)
Kpomo (can be diced into tiny bits)
1 cup Crayfish (ground)
Cameroon Pepper to taste
1 cup Palm oil
1 Onion (chopped)
Salt to taste
Directions:
- Season and boil the meat to obtain the broth
- When the meat is almost soft, add the stockfish and kpomo
- Add about 5 cups of water when the stockfish, meat and kpomo are soft and bring to a boil
- Add the ogbono. Make sure you stir well to avoid lumps.
- Add palm oil and cook on low heat until you see bubbles. (note that ogbono has the tendency to burn so be careful)
- Add the salt, crayfish and seasoning cubes then Boil for another 3 mins
- Add the chopped vegetables
