How to cook Pepper and Pineapple Soup

Ingredients:
Olive oil, 1 tbsp
Onion, 1 [chopped]
Red pepper, ½ [chopped]
Curry powder, 1 tbsp
Turmeric, 1 tsp
Chicken stock cube, 1 (vegetarians may substitute with a vegetable stock cube.)
Water, 400ml/14fl oz
Pineapple, a handful [chopped]
Double cream, 75ml/3fl oz
Preparation:
1. Heat the oil in a saucepan and add the onion and pepper. Fry gently over a medium heat for three minutes, to soften.
2. Add the curry powder and turmeric and cook further for a minute.
3. Crumble in the stock cube and add the water and the pineapple. Bring to the boil and then reduce the heat and simmer gently for ten minutes.
4. Add the double cream and simmer for 2-3 minutes to thicken the soup.
5. Serve!
Tip: Preferably eaten with rice.
