How to make Veggie Omelette Bites
Are you just introducing your baby to solid food? This is the recipe you should be looking at. It contains all the right ingredients and it is also yummy. It is not an extraordinary recipe and you can purchase all the ingredients on Supermart.ng.
You can either bake or fry this Veggie omelet bites.
Ingredients:
2 eggs
2 tbsp natural yoghurt
2 tbsp chopped cooked veggies (eggplant, mushrooms, carrot, peas or tofu)
1 tbsp olive oil
Directions:
Heat the olive oil in a small frying pan
Beat together the eggs and yogurt, then stir in the cooked veggies.
Pour into the pan and cook for a few minutes until the underside is golden and the eggs are cooked through.
Either turn the omelet over carefully in the pan to cook the other side, or place under a preheated grill/broiler to finish the top.
Cool to a safe serving temperature and cut into bite-sized pieces. A perfect dish to eat with fingers!
If you are baking,
Oil the muffin tray
Preheat the oven to about 350 F
Scoop spoonfuls of the already mixed eggs and veggies into the muffin tray
Bake for about 10 minutes
