How to make Strawberry Oat Pancake


Oat pancakes make a healthy breakfast, but we want to indulge a bit with some strawberry toppings. That’s okay right?

For Pancakes:

1 cup oats

2 tbs dark brown sugar

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1 1/4 cup buttermilk


2 tbs vegetable oil

1 tsp vanilla extract


1 1/2 cup chopped strawberries

2 tbs brown sugar

1 tbs butter

2 tsp lemon juice


1. In a medium bowl, whisk together buttermilk, oil, eggs and vanilla.

2. Add flour, baking soda, baking powder, sugar, salt and oats. Whisk together well until all combined. Set aside for about 10 minutes.

3. Preheat the pan for pancakes and oil it lightly. Cook the pancakes for about two minutes on each side. Check the pancakes by pressing the center lightly. If its firm, the pancakes are done.

4. In a sauce pot, melt the butter and add sugar, strawberries and lemon juice. Cook on medium heat, covered, stirring occasionally (for about 10 minutes.) Set aside when nice and soft.

Top off the cooked pancakes with strawberry topping and bring it to your mom or wife for breakfast!
