How to make Haddock Caribbean
If you so love fish and want a new way of having it, you could experiment with this simple healthy Haddock Caribbean recipe. It’s spicy!

Marinate time: 15minutes
Prep time: 10 minutes
Cook time: 8 minutes
Ingredients:
1/4 cup fresh orange juice
1/4 cup fresh lime juice
1 Tbs ShopRite Imported olive oil
1/2 tsp hot sauce
4 (4-oz.) haddock or cod fillets
2 Tbs chopped fresh mint
2 1/2 green onions, thinly sliced
Preparation:
1. For the marinade, in a shallow dish combine orange juice, lime juice, olive oil and hot sauce. Add fillets, turning to coat. Cover and let stand 15 minutes at room temperature.
2. Meanwhile, in a small bowl, combine mint and green onions, season with freshly ground black pepper to taste and set aside.
3. Coat a grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Remove fillets from marinade; discard marinade. Grill fillets, covered, 4 to 5 minutes per side or until fish flakes easily with a fork. Transfer fillets to a platter, top with mint mixture, and serve.
Tip: Make it a meal – you could serve with grilled asparagus and baked sweet potatoes.
