How to prepare Shrimp Fried Rice
Fried rice with Shrimps is the best Sunday rice recipe. Give yourself a break from the regular beef, chicken, fish and try out this Shrimp fried rice. Many Nigerians use either chicken or turkey broth to cook fried rice. This one is a recipe with a difference.
Ingredients:
- 8 ounces small raw shrimp, shelled and deveined
- 1/2 teaspoon kosher salt
- freshly ground black pepper
- 3 tablespoons vegetable oil
- 3 eggs, beaten
- 2 minced green pepper
- 2 cups rice (parboiled)
- 3/4 cup peas
- Diced red bell pepper
- 1 tablespoon soy sauce
Directions:
In a bowl, sprinkle the shrimp with salt and pepper. Toss to coat. Set aside to sit for ten minutes at room temperature
Fry the shrimps in a wok/sauce pan, flipping the sides. Set aside in a plate leaving the remaining oil in the pan
Scramble eggs in a separate pan and set aside
Using the same oil used to fry shrimps, Add onions, green and red peppers. Mix well and cook for 3 minutes.
Mix in cooled rice and shrimp and cook for another 3 minutes. Stirring constantly.
Mix in green onions, salt, pepper, soy sauce and vegetable oil. Cook for another 4 minutes, stirring continuously everything is blended evenly
